Caratterizzazione dei polisaccaridi dell’orzo

ß-glucani e arabinoxilani sono i maggiori polisaccaridi non amidacei dell’orzo di grande interesse in campo alimentare e salutistico, ma anche in campo birrario. Recentemente sono stati inseriti dall’EFSA (European Food Safety Authority) tra le fonti di fibra solubile e sono stati accertati i loro benefici alla salute umana. In ambito birrario, invece, vengono spesso correlati con problemi di filtrazione di mosto e birra. Le relazioni causa-effetto di questi polimeri sono spesso associate alle loro proprietà, oltre che al contenuto, per cui la loro caratterizzazione, in termini di peso molecolare, struttura, conformazione, stato di aggregazione, viscosità intrinseca e dimensioni molecolari, è di grande interesse.

Abstract

ß-glucans and arabinoxylans are the main barley non-starch polysaccharides of great interest in the food and healthy, but also in brewing. They have recently been incorporated by EFSA among the sources of soluble fiber and their benefits to human health are verified. On the other hand, they are often related to wort and beer filtration problems in brewing. The cause-effect relationships of these polymers are often associated to their properties, in addition to the content, and thus, the characterization in terms of molecular weight, structure, conformation, state of aggregation, intrinsic viscosity and molecular size is of great interest.
